Taking locally sourced Dessert Plums and fermenting for a minimum of 6 months before aging inside Marsala Casks for a minimum of 1 year and then moving it over to Bourbon Casks for a further years maturation! Bursting with Plum and Oak notes at the forefront before Spicy undertones develop and notes of Marzipan to help finish off.
